Chia Chocolate Pudding

You will need

1 can coconut milk (only the white part)
1/2 cup coconut water (from the can)
1/4 cup chia seeds
4 medjool dates (pits removed)
2 ripe bananas
1 tsp vanilla extract
fruit (I used raspberries)


Add dates, bananas, white part of coconut milk and 1/2 cup of coconut water to a blender and blend until smooth. Add cocoa powder, vanilla extract and chia seeds and blend again. Pour into the 4 small bowls, cover and refrigerate overnight. Garnish with fresh fruit and serve.
